Creste di Gallo Verde (Bronze die extruded)
Creste di gallo literally translated means 'cockscomb' or the crest on the rooster's head which this shape resembles! A pretty fun substitute for any kind of penne/macaroni and pretty much tastes great with anything. Ours is made with semolina + a dash of wholewheat and coloured green this week with fresh parsley, and extruded through bronze dies for that lovely sauce grabbing texture. Cook in boiling salted water for 5-6 minutes or until al dente. Cook 90% in water and finish balance 10% in sauce!
