Sacchetti di cacio e pere (Blue Cheese + Pears)

(Sah KEH tee) Little sacks of pasta filled with pears, onion, blue cheese, ricotta, thyme & parmesan. Slightly more pasta to filling ratio here so a cream based sauce works well - OR if you prefer a more delicate pasta you can simply request for a classic ravioli shape but this filling!

PAIR WITH: Decadent, delicious and needs a dairy based sauce- butter, a nice melty cheese (fontina/blue cheese/gruyere), a bit of cream, some herbs and perhaps some caramelized fruit (pears or figs!) and there you have  it! Try it with our blue cheese butter!
