Cacio e Pepe x Belper Knolle Kit
The BELPER KNOLLE cacio e pepe Kit comes with
1 ricotta gnocchi (200gms), 1 mezzi rigatoni (200gms), 1 belper knolle from Eleftheria cheese, 100gms Parmesan
We named our little pastificio “Cacio e Pepe” because of our obsession with the Roman classic made with just pasta, pecorino and black pepper and the magic that makes when it comes together! We teamed up with Eleftheria cheese to do a local version with their locally crafted peppery Belper Knolle! Everything you need to cook this dish is in this meal kit (except the boiling water of course!)
For the gnocchi
Put a pot of water to boil, meanwhile grate about 1/2 Belper Knolle in a bowl (or 1/4 Belper and 30gms parmesan). Once the water comes to a boil, salt it generously and gently add the gnocchi to this. While the gnocchi cooks (3-4 mins), put a pan on heat, add some butter (totally optional), once the gnocchi floats up, add this to the pan along with some pasta water! Toss it all together to emulsify. Meanwhile add a spoon or two of pasta water to the grated Belper Knolle and Parmesan mix so it becomes a sort of a paste, now add this paste to the pan and let it all come together on medium heat! The pasta water and cheese will combine together to thicken into a delicious cheesy sauce. Serve with some more grated cheese!
Follow same procedure for the mezzi rigatoni (1/2 Belper + 50gms parm) - cook time for this is 5-6 mins in salted boiling water). Rest of the process is exactly the same!
