Creste di Gallo - Emmer Wheat (Bronze die extruded)- Pan India
Creste di gallo literally translated means 'cockscomb' or the crest on the rooster's head which this shape resembles! A pretty fun substitute for any kind of penne/macaroni and pretty much tastes great with anything. This week ours are made with semolina + emmer wheat to give it that beautiful earthy nuttiness and extruded through bronze dies for that lovely sauce grabbing texture. Cook in boiling salted water for 5-6 minutes or until al dente. Cook 90% in water and finish balance 10% in sauce!
