Tagliolini/Tagliatelle Neri

Tagliolini is a narrower version of tagliatelle, these ones are made with an activated charcoal dough to give it a rich black hue. A more delicate but rich pasta, delicious with a light sauce of seafood, vegetables or cream. These cook fast, so keep an eye out for not overcooking them, better leave it slightly under done as they will continue to cook in the residual heat of the pan.
