Orecchiette al grano arso (48H Pre-order)
Handmade little ear shaped pasta from Puglia in Southern Italy. Making this shape takes me back to the streets of old Bari where I watched (and participated) in making these with the women sitting outside their homes. Simply made with semolina, grano arso or burnt durum wheat (for a beautiful nutty flavour), water, a knife and our hands.
PAIR WITH: Traditionally magical with broccoli rabe, but as delicious tossed simply with some broccoli and a hit of chilli or our sugo di pomodoro.
