Scarpinocc is a shoe shaped filled pasta from a town called Parre in northern Italy. Traditionally they are filled with a hard cheese like grana padano, breadcrumbs, garlic, parsley, milk and some spices. We are doing them 2 ways! The original ones from Parre and another filled with zucchini, almonds, mint, ricotta and parmesan. Take your pick!
PAIR WITH: Burro e salvia for the classic scarpinicc from Parre. You can try some fried zucchini and butter sauce for the zucchini ones!
