Sfolgia Lorda in Brodo
Sfoglia Lorda (or Spoja Lorda) are a traditional Romagna homemade pasta that are prepared by spreading a thin layer of ricotta filling on hand rolled sfoglia which are then cut into tiny little squares that are best enjoyed in a nice broth! We have prepared a porcini broth for these. Each serving comes with the pasta squares and broth.
HOW TO PREPARE: Simply boil the little pasta squares in the broth for 2-3 minutes and serve hot with a sprinkling of parmigiano.
