Tagliolini

This is a narrower version of tagliatelle and heavier on the yolks. This pasta is known as Tajarin in Piemonte and traditionally served with butter and fresh truffles. A more delicate but rich pasta, delicious with a light sauce of seafood, vegetables or cream.
